Depends on #1203 and #1215 getting merged otherwise this will fail when deploying to Vercel.

This both moves the emails into their sub directories
like @zenorocha did before, and updates all the links in the docs.

To the links in the docs there were two changes, first updating to point
the URLs to account for the sub directory naming and secondly updating
to remove the file extensions, hence #1215.
