Description

The TrustyAI organization is being renamed from trustyai-explainability to trustyai- this PR updates the component manifest list accordingly.

not sure why at the beginning we picked upstream "trustyai-explainability" as org, instead of "opendatahub-io"
should it be set to "opendatahub-io" in this PR if build by Operator is for the "opendatahub-io" ?
(unless you do not sync code from "trustyai-explainability" to "opendatahub-io" till each ODH release )
