The issue you're experiencing with the "Document Extractor" node outputting an empty "text" field when parsing Excel content in Dify version 1.0.0 is a known bug. This occurs specifically in a self-hosted Docker environment. A fix has been developed (PR #14695), but there isn't a specific solution provided for users on version 1.0.0. A suggested workaround is to downgrade to Dify version 0.15.3, which does not have this issue with Excel files [1].
