Add HomeKit thermostat fan state mapping for preheating, defrosting

Updates the HomeKit thermostat fan state mapping to include support for additional HVACAction values: PREHEATING and DEFROSTING. These actions are currently used by some integrations but were not mapped, resulting in an error.
