Overview of the issue
JHister doesn't use an explicit mapping for elasticsearch. Elasticsearch guesses the mapping with the first index request. Depending on the first values, elasticsearch may guess a wrong type for fields. In JHipster 7.9.3 it's possible, that entities can't be saved due to mapping conflicts, in latest git entities with type conflicts can be saved but aren't queryable.

Motivation for or Use Case
Reproduce the error
Steps to reproduce:
- minimal configuration: any ui, any database, eleasticsearch, an entity with a String or TextBlob filed
- use a compatible elasticsearch version/same as in docker config (7.17.4 for JHipster 7.9.3, 8.5.3 for latest git)
- start with an empty database
- start with a fresh elasticsearch index (no mappings defined), otherwise remove index an recreate it
This scenario is realistic for production, when existing data is imported or migrated the fist time.

The first string has the format "YYYY-MM-DD" but it isn't intended to be a formatted date. -> elasticsearch detects a date value and uses a date type.
For short text blob values elasticsearch uses the default string type which ignores any data after 256 characters.
Second record:
"after 1815", "[a long text, but important search terms are after character 255]"
In JHipster 7.9.3 the second record can't be saved (see stacktrace below). Latest git version can save the record, but can't be indexed and will never be found. In my opinion a search index should not be more restrictive than the corresponding database.
Since JHipster has all type information, it is possible to generate an explicit elasticsearch mapping to prevent those problems
