Add more checks and test configurations

Currently we only have two very simple checks on grib and netcdf output files.

We should think about having more rigorous checks, and also test more combinations of configurations. Quite a lot of entries in the config currently don't have test-coverage. For example: check that write_initial_state actually does what it's supposed to do, test different combinations of input and output processors, etc.
