Improve test coverage for common workflows

KIT repo has very minimal test coverage now. We have observed kit being broken w/o notice (e.g.).
We should at least test the common workflows:

[ ] Use kitctl to bootstrap a test environment
[ ] Create and smoke test a guest EKS cluster in a kit environment
[ ] Create and smoke test a guest kit cluster in a kit environment
