What does this PR do?

Add support to OpenSearch logs, an example to create an Amazon OpenSearch domain, and an example of instrumentation for an EKS cluster.

Motivation

Exemplify best practices to instrument EKS clusters with Terraform to send logs in a opensearch observability stack composed of AWS Managed Services.
