chore: update .gitignore to ignore simulation results

Files and folders are created when testing/running locally, for example...

• **/.ipynb_checkpoints/
• *.ipynb
  The contents of the *.speos folders are also modified. Could the .gitignore be modified to ignore these changes without inadvertently ignoring other required files?
