When upgrading Airbyte using the Helm chart, the versions of source connectors and destinations reset to their default values.

Steps to Reproduce

Deploy Airbyte using the Helm chart and upgrade the version of the connector in the web interface
Upgrade the Helm chart to a newer version.
Observe that the connectors' versions revert to their defaults.

This may be caused by the platform bootloader loading the connector catalog again, even if you already have a catalog.
