Consider disabling terra progress bars

One of the stages in `get_stac_data()` -- I suspect but don't actually know if it's `terra::mosaic()` prints a progress bar that can't be controlled via `progressr`. As this progress bar doesn't really represent when you can expect your function to be done, and isn't controllable from the user side of things, it's probably worth turning it off.
