The maximise/restore icons look the same, which makes it difficult to know whether a window is maximised or just taking the exact amount of screen space.
If I use the default Adwaita, they are not ideal but, at least they look somewhat different (the square becomes smaller).
But if I use Papirus, they look exactly the same.... I was going to say "exactly" but when I enlarge them with the screenshots, they look very slightly different. The square's top side becomes slightly thicker, but that's very hard to notice.
How about using two noticeably different icons for maximise/restore, like the Qogir icon theme?
Even Adwaita's case is bad, because the size is only apparent when you compare them side-by-side. If you only see one, which is the real-usage case, you can't easily tell if it is the bigger square or the smaller square.
