Add more eslint docs

Came up on the discord recently that Redwood's eslint config was a little hard to find. We could use a cookbook on configuring it, or just have docs that better point to where things are happening. Searching the website, it does bring up the lint command, which points to the eslint in the repo, but that's the most we got (go read the source basically).
