[exporter/elasticsearch] Workaround TSDB array dimension limitation for metrics OTel mode (#35009)

Adding a feature - Explain what this achieves.--> Elasticsearch TSDB does not support array dimensions. Workaround it by stringifying attribute array values in OTel mapping mode for metrics.
