Proxy Authentication returns Current User: anonymous (Admin)

Describe the problem you are having

I've setup Authentik and Traefik. After authenticating with Authentik frigate works but I'm always shown as "Current User: anonymous (Admin)" no matter what user account I log into Authentik with. My user is in the admins group and a test user is in no groups.

My header contains: X-Authentik-Groups: authentik Admins|Admins|admin

shouldn't that "admin" give me admin access to frigate, I'm getting viewer since I have it as my default.

Yes, it should. You'll want to make sure the header is actually being passed to Frigate.
