as well as the default storage class option, note that when creating a new data volume it's auto selected, and with the initial workspace volume selecting and unselecting it will not do anything. Note that the notebook request goes through with these default settings and either way, get bound to the default storage class which seems to reflect what we have in prod

There are also these custom definitions that may just be confusing to the end user

Keep things as simple as possible for the end-user and remove the yaml bits from the volumes (users use the entire volume anyways, dont want them to have too much freedom ;) ). Also remove the multiple Read-Write commands / keep them at Read-Write once only.
